Although, if you are not from the Dominican Republic, you may be surprised to hear “Sweet beans” and know that this dessert is made from red beans boiled with cinnamon, blended and strained; then combined with evaporated milk, coconut milk, sugar, cinnamon, cloves and criolla sweet potato.

You need
1 cup of raw red kidney beans
4 cups of water
3 cinnamon sticks
1 Can of Carnation Evaporated Milk
1 Can of La Lechera Condensed Milk
3 cinnamon sticks
1 tsp vanilla extract
8 Units Sweet cloves
1 teaspoon vanilla extract
8 Units Sweet cloves
1 Cup sweet potato, peeled and cubed
1/2 Cup of raisins
Cookies or cassava to serve
Production method
- Boil the beans with a cinnamon stick in at least 4 cups of water.
- Cook until the beans are soft. Let cool a bit. Remove the cinnamon stick.
- Blend the beans with part of their liquid, strain and place in a pot with the evaporated milk, the condensed milk, the coconut milk, the bean water, the salt, the vanilla, the remaining cinnamon sticks, the cloves and the butter.
- Cook over medium heat for 25 minutes.
- Add the sweet potato and raisins and cook over low heat for another 15 to 20 minutes or until the sweet potato is soft.
- Serve hot or cold, with cookies or cassava.
