Preparation

In a bowl, prepare the vinaigrette by mixing the oil, vinegar, soy sauce and ginger. Pour into the salad bowl. Rectify the salt and pepper if necessary. Take out the mint leaves, rinse them and cut them. Spread them over the salad. Serve cold.
A tip from the author
Since mint oxidizes quickly when cut, if you prepare the salad in advance and keep it in the fridge, add the leaves at the last minute “to release all their perfume.”
